Ingredients

  • 2 cups All-purpose flour
  • ½ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • ½ cup Unsalted butter, cold and cubed
  • 1 cup Fresh blueberries
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. In a separate bowl, mix the heavy cream and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.
  6. Turn the dough out onto a floured surface and knead gently. Pat into a circle about 1-inch thick and cut into 8 wedges.
  7. Place the wedges on a baking sheet lined with parchment paper.
  8. Bake for 18-20 minutes, or until golden brown.
  9. Let cool slightly before serving.
