- 1 cup Rice cooked
- 1 can Black Beans drained and rinsed
- 1 cup Corn cooked
- 1 cup Cheddar Cheese shredded
- 4 large Tortillas
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
1. Heat the olive oil in a skillet over medium heat.
2. Add the black beans, corn, cumin, chili powder, and salt. Cook for 5-7 minutes.
3. In a mixing bowl, combine the cooked rice and the bean mixture.
4. Warm the tortillas in a skillet or microwave.
5. Spoon the rice and bean mixture onto each tortilla. Top with shredded cheese.
6. Roll up the tortillas and serve warm.
