Ingredients

  • 4 cups Beets, peeled and diced
  • 1 cup Carrots, diced
  • 1 cup Onions, chopped
  • 4 cups Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onions and carrots, sauté until softened, about 5 minutes.
  3. 3. Add beets and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes or until beets are tender.
  4. 4. Use a blender to puree the soup until smooth. Season with salt and pepper to taste.
  5. 5. Serve hot, garnished with a dollop of sour cream if desired.
