Ingredients 

Main Ingredients

  • 2 tablespoon Butter
  • 1 cup Chopped Onion
  • 1 cup Chopped Carrot
  • 1 cup Chopped Celery
  • ¼ cup All-purpose Flour
  • 2 cups Chicken Broth
  • 1 cup Beer
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Heavy Cream
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion, carrot, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Stir in the flour and cook for another 2 minutes.
  4. 4. Gradually whisk in the chicken broth and beer. Bring to a simmer and cook for 10 minutes.
  5. 5. Reduce the heat to low and stir in the shredded cheddar cheese until melted.
  6. 6. Stir in the heavy cream and season with salt and pepper to taste. Cook for another 5 minutes.
  7. 7. Serve hot with crusty bread.
