Ingredients 

Main Ingredients

  • 3 lbs Beef Chuck Roast
  • 2 cups Beef Broth
  • 1 cup Red Wine optional
  • 4 Carrots peeled and cut into chunks
  • 4 Potatoes peeled and cut into chunks
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 2 sprigs Thyme
  • 2 sprigs Rosemary

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef roast on all sides until browned.
  3. Remove the roast and set aside. In the same pot, add onions and garlic, cooking until softened.
  4. Pour in the red wine, if using, and scrape up any browned bits from the bottom of the pot.
  5. Return the roast to the pot, add beef broth, carrots, potatoes, thyme, and rosemary.
  6. Cover and transfer to the preheated oven. Cook for about 4 hours, or until the meat is tender.
  7. Season with salt and pepper to taste before serving.
