Beef and Guinness Stew

Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 2 tablespoon Olive oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 bottle Guinness beer
  • 2 tablespoon Tomato paste
  • 2 large Carrots, sliced
  • 2 large Potatoes, peeled and cubed
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon Flour

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
  2. In the same pot, add the onion and garlic. Cook until the onion is soft.
  3. Return the beef to the pot. Sprinkle the flour over the beef and stir to coat.
  4. Pour in the beef broth and Guinness beer. Add the tomato paste, carrots, potatoes, thyme, salt, and pepper. Stir to combine.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 to 2.5 hours, or until the beef is tender.
  6. Serve hot, with crusty bread if desired.
