Main Ingredients
- 1 can Black beans drained and rinsed
- 1 can Kidney beans drained and rinsed
- 1 can Garbanzo beans drained and rinsed
- 1 cup Corn fresh or frozen
- 1 cup Cherry tomatoes halved
- 1 cup Cucumber chopped
- ¼ cup Red onion finely chopped
- ¼ cup Cilantro chopped
- 3 tablespoon Olive oil
- 2 tablespoon Lime juice freshly squeezed
- 1 teaspoon Salt
- ½ teaspoon Black pepper
1. In a large mixing bowl, combine the black beans, kidney beans, garbanzo beans, corn, cherry tomatoes, cucumber, red onion, and cilantro.
2. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
3. Pour the dressing over the bean mixture and toss to coat evenly.
4. Chill in the refrigerator for at least 30 minutes before serving.
