Basque Codfish Stew Recipe

Main Ingredients
- 1 lb Codfish cut into chunks
- 2 tablespoon Olive Oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 1 Red Bell Pepper chopped
- 1 cup Tomato Sauce
- 2 cups Fish Stock
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 2 Potatoes peeled and diced
Heat olive oil in a large pot over medium heat.
Add chopped onion and garlic, sauté until softened.
Add red bell pepper and cook for another 5 minutes.
Stir in tomato sauce, fish stock, paprika, salt, and black pepper. Bring to a simmer.
Add diced potatoes and cook until tender, about 15 minutes.
Add codfish chunks and simmer for another 10 minutes until fish is cooked through.
Serve hot and enjoy!
