  • 4 large Russet potatoes washed and diced
  • 1 cup Mayonnaise
  • ½ cup Sour cream
  • ¼ cup Green onions chopped
  • ½ cup Cheddar cheese shredded
  • 4 slices Bacon cooked and crumbled
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place diced potatoes on a baking sheet and bake for 45 minutes or until tender and golden brown.
  3. In a large mixing bowl, combine mayonnaise, sour cream, green onions, cheddar cheese, and bacon.
  4. Add the baked potatoes to the bowl and mix until well combined.
  5. Season with salt and black pepper to taste. Serve warm or chilled.
