Bahamian Chicken Souse

Main Ingredients
- 2 lbs Chicken cut into pieces
- 1 large Onion sliced
- 2 cloves Garlic minced
- 2 medium Potatoes peeled and diced
- 2 large Carrots sliced
- 1 large Green Bell Pepper sliced
- 1 large Lime juiced
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 6 cups Water
1. In a large pot, add the chicken pieces and cover with water. Bring to a boil and then reduce to a simmer. Skim off any foam.
2. Add the sliced onion, minced garlic, diced potatoes, sliced carrots, and sliced green bell pepper to the pot.
3. Pour in the lime juice, and season with salt and black pepper. Stir well.
4. Let the mixture simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
5. Adjust seasoning to taste. Serve hot.
