- 2 pounds potatoes peeled and sliced
- 1 cup chicken broth
- ½ cup white vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 cup onion chopped
- ¼ cup vegetable oil
- 2 tablespoon fresh parsley chopped
1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
2. In a pot, combine chicken broth, vinegar, sugar, salt, and pepper. Bring to a boil.
3. Add chopped onion to the broth mixture and cook for 5 minutes.
4. Slice the cooled potatoes and place them in a large mixing bowl.
5. Pour the hot broth mixture over the potatoes. Add vegetable oil and fresh parsley. Toss gently to combine.
6. Let the salad sit for at least 30 minutes to allow the flavors to meld. Serve warm or at room temperature.
