Ingredients

  • 6 cups potatoes, peeled and cubed
  • 3 large eggs, hard-boiled and chopped
  • 1 cup celery, chopped
  • 1 cup onion, finely chopped
  • 1 cup mayonnaise
  • ¼ cup white vinegar
  • ¼ cup sugar
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Boil potatoes in a large pot until tender, about 10-15 minutes. Drain and set aside to cool.
  2. 2. In a large mixing bowl, combine mayonnaise, vinegar, sugar, mustard, salt, and pepper. Mix well.
  3. 3. Add the cooled potatoes, eggs, celery, and onion to the bowl. Stir gently to coat all ingredients with the dressing.
  4. 4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
