Meatballs
- 1 lb ground beef
- ½ cup uncooked white rice
- 1 egg beaten
- ¼ cup chopped fresh mint
- 1 teaspoon salt
- ½ teaspoon black pepper
Soup
- 8 cups chicken broth
- 1 onion chopped
- 2 cloves garlic minced
- 3 carrots sliced
- 2 zucchini chopped
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
In a mixing bowl, combine ground beef, rice, egg, mint, salt, and pepper. Form into meatballs.
In a large pot, bring chicken broth to a boil. Add onion, garlic, carrots, zucchini, tomatoes, oregano, cumin, salt, and pepper. Simmer for 10 minutes.
Gently add meatballs to the soup. Simmer for 30 minutes until meatballs are cooked through and rice is tender.
