Ingredients 

Main Ingredients

  • 1 lb ground beef
  • ½ cup uncooked white rice
  • 1 egg
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups beef broth
  • 2 cups water
  • 1 can diced tomatoes 14.5 oz can
  • 1 large carrot, sliced
  • 1 large potato, diced
  • 1 zucchini, sliced
  • ½ cup frozen peas

Instructions 

  1. In a large bowl, mix ground beef, rice, egg, cilantro, onion, garlic, salt, and pepper. Form into meatballs.
  2. In a large pot, bring beef broth and water to a boil. Add meatballs and cook for 10 minutes.
  3. Add tomatoes, carrot, potato, and zucchini. Cook for another 20 minutes.
  4. Add peas and cook for an additional 10 minutes. Serve hot.
