If you had to describe what your ideal salad is what would it be? Is it a fresh green garden salad with a few greens mixed in together. Don’t get me wrong a garden salad serves its purpose but for some people a few leaves wouldn’t hit the mark.
I’m that sort of person. When it comes to a salad it has to stand out all on its own. It’s like a concert with no supporting act required. Below this salad does just that.
Ingredients
2 cups prepared red, white and black organic quinoa
1 cup brown lentils either freshly boiled or tinned. It’s fine to use tin in this case.
1/2 red capsicum
1/2 yellow capsicum
1/4 cup flat leaf parsley
2 fresh beetroot bulbs boiled & chopped
1 cup baby cherry tomatoes
Dressing
1/2 lemon juice
1/4 cup olive oil
Salt
Pepper
Method
Mix all ingredients together in a bowl except for dressing.
To make the dressing place all the ingredients into a blender and whiz for 10 seconds. This will turn the dressing light and fluffy. Pour into salad and serve.
Serving Suggestion
Make some croutons and top salad with croutons.
