This Greek Chicken Marinade makes a regular appearance in our home and has been passed down from our Greek Immigrant Parents.
Have you ever wondered why the chicken tastes so wonderful in Greek chicken souvlakia ( kebabs ) or grilled chicken?
The secret is in the Greek Marinade. Allow to marinade the chicken overnight or for at least an hour. Chicken loves a good marinade, and if you allow a little time the olive oil, lemon, wine and herbs will infuse into the chicken, tenderizing and flavouring. All that is left, is cooking.
As a smart meal prep idea, marinade the chicken overnight or in the morning before work. When you return, all that is left is to cook the tenderized and flavoured chicken. The recipe contains suggestions as to the different ways you can serve the chicken this way – and quickly.
You can use chicken breast, tenderloins, thigh or even a whole chicken cut into pieces, and left to marinade for a little while.
Be prepared, this recipe will become your staple and will make a routine appearance in your kitchen.
Once you have marinaded the chicken, Bake, grill, pan-fry the chicken and you will achieve that classic moist Greek flavour.
A dry white wine is generally used. Like a Sauvignon Blanc. A sweet wine would not work.
- 500g Skinless Chicken Breast
- 1/2 cup Pure olive oil
- 1/2 cup fresh lemon juice
- 1/2 cup dry white wine
- 1 tablespoon oregano
- 1 teaspoon sea salt
- 2 teaspoons cracked pepper
- 2 cloves garlic crushed
- 1 teaspoon lemon thyme ( optional)
Cut your chicken into cubes or strips. The smaller the pieces, the easier you will make it for your chicken to absorb all the flavours.
Mix the remainder listed ingredients together, pour over chicken, rub the marinade into the chicken .
Seal the chicken in a container , place in the fridge and allow to marinade overnight or for at least one hour.
To cook on the Pan
Add one tablespoon of pure olive oil on the pan, allow to heat and add the chicken pieces. Don't stir ( or turn over ) until each size is cooked through.
To Bake The Chicken
Pre-heat oven to 180 Degrees Celsius.
Add the chicken pieces into an ovenproof baking dish with the marinade. Cover with foil and allow to bake for 30 - 40 minutes. Cooking time depends on the size of your chicken pieces. Turn chicken pieces over 25 minutes into cooking, and remove the foil to allow the chicken to colour for the last 5-10 minutes.
Chicken Souvlaki Sticks
Skewer the chicken pieces, alternating with vegetables like onion or capsicum or perhaps cubed halloumi skewered into the sticks. Bbq or grill the chicken and vegetable skewers.
