Classic Greek Lemon and White Wine Marinade.


Have you ever wondered why the chicken tastes so wonderful in Greek chicken souvlakia ( kebabs ) or grilled chicken?

The secret is in the marinade. Allow to marinade chicken  overnight. Bake, grill pan fry the chicken and you will achieve that classic Greek flavour.

A dry white wine is generally used. Like a Sauvignon Blanc. A sweet wine would not work.


500g chicken breast, thigh pieces skin removed.

1/2 cup olive oil

1/2 cup fresh lemon juice

1/2 cup dry white wine

1 tbspn oregano

1 tspn sea salt

2 tspns cracked pepper

Mix the last 6 listed ingredients together, pour over chicken, seal the chicken in a container place in the fridge allow to marinade overnight.

It’s truly simple, but the combination of classic Greek ingredients , lemon, pure olive oil, and wine are simply perfect.

Cook your chicken the way you like.
