This fresh, vibrant and bursting with life healthy rocket and basil pesto pasta recipe is paired with San Remo’s Spiral Spelt Pasta – although you can easily substitute with your own favourite spaghetti. Frankly, I can’t think of a better way to eat this lively dish. The spelt pasta and the fresh herb laden Rocket and Basil Pesto together are an excellent pair.  You can of course substitute with your own kind of Spaghetti.  Spelt Pasta is high in fibre, lower carbohydrate and tastes smoother than your typical wholemeal pasta.

About Basil Pesto

If you haven’t made pesto before, you will be pleasantly surprised.  Stirred through pasta it makes an easy and flavour packed pasta meal . Once I  made my own pesto and noticed the jar variety when a dull copy of what is really super versatile, I never turned back. Making your own, renders a truly different taste and look. For starters, it is bursting with colour, followed with the aroma of the basil and garlic. Use fresh ingredients and a good quality olive oil and if you have a food processor it is made in no time. You will discover a new found love for Pesto! so Buon Appetit.

Easy & Healthy Basil Pesto Pasta Recipe

Prep Time: 8 minutes
Cook Time: 12 minutes
Total Time: 20 minutes

A fresh vibrant and ever so full of flavour easy rocket and basil pesto pasta dish.

Ingredients

  • 250g San Remo Spelt Pasta or Equivalent
  • 1/2 cup Rocket, Basil and Pine-Nut Pesto
  • 1 tablespoon parmesan
  • 1/4 cup English Spinach
  • 1 teaspoon pecorino or parmesan

Instructions

Boil Pasta according to package instructions. Strain and rinse in cold water. Allow to cool.

Make a fresh batch of Rocket, Basil and Pinenut Pesto.

In a mixing bowl, stir through the pesto into the pasta.

Serve on a plate, sprinkle with parmesan or pecorino, or parmegano.

Notes

Of course, you can use any kind of Pasta.

  6. How fun! Basil is fun to grow if you are learning to garden… Great to try your hand at growing your own home instead of buying from the store. This dish looks lovely.
