If you are one of those persons who needs a daily chocolate fix, then this quick and easy hedgehog slice variation is perfect for those weak moments.
Sweetened with a small amount of honey, raw cocoa is substituted for chocolate, and dates for extra goodness are used to adhere the mix together.
Tip:
The dates are soaked and strained. I reserve the strained juice and use a tiny amount ( tablespoon at a time ) if my puffed rice mix is a little dry when the wet ingredients are mixed through )

Ingredients
1 cup walnuts
1 cup puffed rice
3 tbspns cocoa powder
2 tbspns shredded coconut
1/2 cup dates ( soaked and strained to make quantity )
Liquid:
2 tbspns honey ( warmed not hot )
1 tbspns coconut oil ( warmed not hot )
2-4 tbspns reserved date juice
Top:
100g dark chocolate
1 tbspn coconut oil
50g white chocolate.
1 tspn coconut oil
Method
Crush your walnuts roughly. It’s nice to have different sized walnuts in the slice. Some fine and small some a little larger.
In a large bowl, place puffed rice, cocoa powder, coconut, and walnuts. Mix the dry ingredients.
Warm the coconut oil and honey. Add the soaked and strained dates, coconut oil and honey. Stir through and place into a small 15 x 15 cm square cake tin. Line the cake tin with greaseproof paper. Ensure paper hangsnof size so you can easily remove set mix from tin.
Add the puffed rice mix onto tin and press down.
Place in fridge.
Meanwhile prepare chocolate for topping.
Melt the dark chocolate and coconut oil. It’s easier to do this in microwave on 20% power.
Melt the white chokate and coconut oil. Again it’s easier in microwave.
Remove set puff rice from fridge. Poor dark chocolate and spread evenly. Dollop white chocolate hear and there, then with a scewer run through the white chocolate to make swirls.
