Low carb protein powder is included in the recipe as I’m training at the gym and struggle to maintain my protein intake. At the end of the day though I won’t eat something healthy if it does not taste good. If you have a food processor your prep time is 5 mins Max.
32g low carb protein powder ( protein powder of your choice )
3 tbspns cacao powder
1 cup dates pitted
1 cup water
1/2 cup walnuts
1 tbspn coconut oil
1 tbspn baking powder
1/4 cup Pepitas
2 tbspns Goji berries
2 tbspns Coconut/almond milk(optional)
Soak dates in water for half an hour.
Place soaked dates with the water into your nutribullet. Add all the ingredients except pepitas and goji berries. Process for 5-8 secs. Be careful not to process for too long.
Remove.from blender place in bowl and add coconut milk and stir ingredients.
Place onto a prepared small lamington pan (lined with baking paper) fsmooth over until.your happy with the thickness. Remember it will rise a little. Sprinkle with extra pepitas and bake in 180 degree oven for 18 mins.
Let the slice cool on a wire rack and when cooled cut into desired sized pieces.
