Vegan, glutenfree and with no added sugars , perfectly chewy and crunchy , sweet and tart cut them into bite sized pieces perfect for snacking.
Sweetened only by the cranberries and dates, they are a perfect low carb snack.
Delectable little morsels of goodness to include in lunches but won’t last long. I left these on the kitchen bench and found sneaky visitors sneakily eating through piece by piece… For me as I do like to snack it’s important to have some very healthy snacks at hand. I cut mine into small square pieces to treat myself to a piece here and there during the day.
Ingredients
1/4 cup almond butter ( or peanut or tahini ).
1/2 cup mixed fruit
1/4.cup cranberries
1 cup pitted dates
1/4 cup rolled oats ( not quick Oates )
3 tablespoons chia seeds
1/4 cup seed mix ( pepitas and sunflowers )
1 tblspn sesame seeds
1/4 cup flaked almonds
1/4 cup Coconut oil
Place baking paper onto lightly oiled small lamington dish.
Put pitted dates into a blender and blend till it forms a paste.
Heat coconut oil and butter till it liquifies. Mix the date paste and heater oil and butter and stir.
In a bowl place all the dry ingredients together.
Pour wet ingredients and mix through the nut mix.
Press onto a small lamington dish.press down the mix and freeze for 30 mins.
Cut into pieces. Simple!!
Store in the fridge during summer. This will keep 5 days.
