Quick Bake Poached Pear and Berry wholemeal muffins


There is a certain kind of joy  when my children come home from a busy day at school and their eyes gleam as they notice there is something freshly made in the cake stand … actually they know as soon as they have walked in before they even see the cake stand… Achieving the homely baked smell is easy with these muffins. They  are a one bowl mix sort of deal. Actually you can mix the ingredients with your whisk then a wooden spoon. Don’t even bother with an electric beater. Add them into muffin cases so the only washing up is the bowl you used earlier. So really, there is no need for the heavy overtly sweetened muffins from the bakery.

These guys are have all of two tablespoons of sugar and the rest of the sweetness is gained from the poached apple. Actually I was quite lazy I roughly chopped the Apple added 1/4 cup water and poached the Apple in the microwave for 1 minute. The flour used is wholemeal. Fantastic for keeping  children’s appetites at bay.


2 medium sized eggs

50g butter softened at room temp

75ml  coconut oil or olive oil

1/4 cup milk ( cows, almond, soya etc )

2 tbspns sugar 

1 apple or pear roughly cut into 2-4cm pieces

1/4 cup water

2 1/2 cups wholemeal flour 

1/4 cup rasberries


Place chopped fruit and water into a microwave safe dish.heat for 1 minute on high. Keep an eye on it as each microwave varies in strength.

In a separate bowl add eggs and butter and oil and whisk roughly for 30 seconds. Add the rest of ingredients except berries.mix with a wooden spoon. Add the rasberries and stir through very lightly. Add the mix into muffin cases and bake for 18 -20 minutes on 180 degrees. 

Add cream cheese icing.
