Aromatic Carrot Cake


Sweetened with freshly pureed green apples, laced with an irrevocable aroma of freshly ground cinnamon and mixed spices. I hesitate to mention it’s vegan… No-one needs to know because it tastes heavenly and nothing else matters.

Recipe Tips

If you have never ground your own spices, when you do the first time you will be overwhelmed at the depth of aroma. You will irrevocably then understand my love affair with spices.

Why make puree apple? It simply tastes real, and well… why buy it. It really doesn’t take long and you can always keep extra in the fridge.

Now this last tip, so simple and yet every carrot cake never includes this little step. You will know why when you  cut through your cake. Here is the tip, just trust me on this one. Grate one carrot very finely, if the juice of the carrot separates don’t throw out include. Grate the other two carrots as you would roughly. The finely ground carrot will assist with the colour and texture.

Cooking Time: 45-50mins

Cooking Temp: 180 °C


  • 1 and a half cups grated carrots approximately 3 medium carrots
  • 2 green apples
  • 3/4 cup water
  • 1/4 cup almond milk or milk of choice
  • 1 tbspn olive oil
  • 4 tbspns pure honey
  • 1/2 tspn bicarbonate of soda
  • 4 tbspns whole cloves – freshly ground to 2 tbspns ground cloves
  • 2 tspns ground cinnamon
  • 1 1/2 cups Self Raising Flour
  • 1/4 cup walnuts roughly chopped
  • Seeds to decorate.





In a saucepan add the peeled and sliced green apples into the water and boil on medium for 2 minutes.  Allow the boiled apples to cool down and puree.  The end result should be three quarters of a cup of pureed apple sauce.

3 medium carrots when grated should make one and a half cups grated carrots when packed down. Also the amount of liquid in the carrot and size of the carrot will determine how wet your mix is. This means, keep an eye on the flour added.


To grind your spices you can either use a mortar and  pestle or a food processor.

Add the olive oil, milk of choice and apple sauce into bowl and stir-through briefly.

Add your spices, flour, bicarbonate of soda and beat for 2 minutes.  With a wooden spoon, stir through the carrots.

Line a small loaf tin not the bakers size with greaseproof paper add your mix and bake for 45 to 50 minutes in moderate oven.

Decorate with sunflower seeds pine nuts or any seat of your choice.

The amount of time will vary depending on your oven and the temperature of the ingredients you’re working with.

Let the cake cool before cutting.
