These are healthy, wholegrain and rich in flavour so good for you, could double up as a quick breakfast cookie on the go. I was going to dress them up a little with icing but felt it was unfair to them as they simply taste wonderful on their own.
No butter, only a small amount of coconut oil and sweetened with WholeEarth Raw Sugar and Stevia Blend this sugar has 50% less sugar than your regular variety. Substitute with raw sugar or brown sugar if you prefer. They are made with spelt flour is naturally rich in nutrients such as fiber, iron and protein. Oats are also included and thus makes them a wonderful low glycaemic index snack.
Ingredients
1/4 cup coconut oil, warmed to liquid
1/2 cup WholeEarth Raw Sugar and Stevia Blend or raw sugar
2 eggs
1 tsp baking powder
1/2 tspn bicarbonate of soda
1 tbspn honey
1/2 cup oats
1 cup Wholegrain Spelt Flour
1/4 cup shredded coconut
1/4 cup sultanas
Method
In a bowl mix the oats, coconut, flour, bicarb, baking powder.
Add the coconut oil which should be in liquid format and mix throught the sugars. Beat in the two eggs.
Stir through the dry ingredients into the egg mixture.
Form small rounds and place into a lined baking dish.
Preheat oven to 180 degree Celsius. Bake in a fan forced oven for 18 minutes.
Allow to cool outside of the oven before moving.
