Κουλουράκια λαδερά με κανέλα / Spiced and Aromatic Biscuits

A sweetly scented biscuit they will be a permanent inclusion in your pantry. Deliciously soft cookies scented with cinnamon nutmeg and cloves, and sweet and naturally with orange juice what more could you ask. The other advantage is that they are  super easy to make as you’re not working with butter, which at times can make it tricky as the  consistency of the butter plays a role in the end result.

You can make any shape Oval, Crescent, ring or use a cookie cutter if you prefer.  The dough is oily and moist to touch but the end result is a tasty and soft cookie.

Ingredients

2/3 cup orange juice freshly squeezed

2/3 cup olive oil

1/4 cup caster sugar

1 3/4 cup plain flour

1/8 tbspn nutmeg

1/2 tbspn cinnamon

1/2 tbspn freshly ground cloves

1 tbspn baking powder

Topping

1 tbspn brown sugar

1/2 tbspn cinnamon

Method

Mix the orange juice, olive oil and sugar together.

Add the spices and stir through.

Sift the baking powder and flour.

Add the dry ingredients to the wet and with your hands mix, and knead until the dough is soft.

Mix the brown sugar and extra cinnamon together and use it as a topping for the biscuits shape them as you like. I usually sprinkle some of the cinnamon mix onto the bench and roll the dough lightly on to the cinnamon.

Baked on 180 degrees Celsius oven for 20 minutes.

Makes approximately 20 biscuits.
